Sweeten the Celebration
No Thanksgiving is complete without a little pumpkin spice! Try our Pumpkin Spice Cheesecake Bars — creamy, spiced, and perfect for sharing with family and friends.
Pumpkin Spice Cheesecake Bars
Ingredients:

1 ½ cups graham cracker crumbs

¼ cup brown sugar

½ cup melted butter

2 packages (8 oz each) cream cheese, softened

½ cup granulated sugar

2 large eggs

1 cup pumpkin purée

1 tsp vanilla extract

1 tsp cinnamon
-
½ tsp nutmeg
-
¼ tsp cloves
-
Whipped cream for topping (optional)
Directions:

Preheat your oven to 325°F (160°C). Line an 8x8-inch baking pan with parchment paper.

In a bowl, combine graham crumbs, brown sugar, and melted butter. Press evenly into the bottom of the pan to form the crust.

In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla.

Divide the batter in half. To one half, add the pumpkin purée and spices; stir until blended.

Pour the plain batter over the crust, then top with the pumpkin mixture. Swirl gently with a knife for a marbled look.

Bake for 40–45 minutes or until the centre is just set. Cool completely, then refrigerate for at least 3 hours before slicing.

Serve chilled with whipped cream and a sprinkle of cinnamon.
